The enclosed patio at Pride of the Mediterranean on San Francisco's Fillmore Street smells delightful: a comforting mix of charcoal smoke, sauteed onions, and either resin or berries, depending on the plumes of steam issuing from customers' mouths. When owner Adnan Abu Sharkh is not setting newcomers up with 3-foot-tall hookahs, he returns to his customary seat to fuss with the charcoals on his own water pipe and sip clouds from the end of its long, flexible tube.
